Chocolate Bomb

Ok.

I know it is on a Christmas plate, but it is a large cake and the poinsettia plate was the most ginormous plate I had.

So be it.

I wish one of these cakes would fall out of the sky and hit me right on the head.

Yes those are dyed (raw) Easter eggs.

I am clearly in a holiday conundrum over here with the eggs and the plate.  Add a deep fried turkey and jack ‘o lantern and I have covered the spectrum of holiday icons.

This cake will make you famous.

Promise.

I usually frost it with a cream cheese frosting, because I adore chocolate cake and cream cheese frosting. However, this cake was for my friend Jeni’s son and since it was his birthday, I allowed the frosting of his choice. Because I am nice like that.

And it is a thick batter. Don’t bother using a hand held mixer with this concoction because it would literally burn the motor out. You will have to use a stand mixer or your own two arms. I do not own a stand mixer (yet) so I used my arms. And I will tell you it is a tough stir. Even with my Jillian Michaels 30 Day Shred arms.

Tough.

The original recipe calls for 1/2 cup of Kahlua but since I was out (how did that happen?) I subbed 1/2 cup of strong coffee.

Can I just tell you that this is the absolute most perfectly divine shaped coffee cup in the whole entire world? Look at that perfect shape! Most wide bottoms are not looked favorably on in todays society. But this baby got back cup is perfect.

Perfect.

These used to be my moms. Hoping you could tell that from the 1978 strawberry motif. She sent them all to me because I would always tell her how much I loved them when I was visiting. And one day they just showed up in the mail. Except two were broken.

Chocolate chips in cake is pure genius.

Everyone should own a bundt pan. This was a Christmas gift. I told Mr. Right I wanted a bundt pan for Christmas one year. Much like the ice cream maker.

Arguably one of the best Christmas presents EVAH!

Chocolate Bomb Cake

1 package chocolate cake mix

1 3.9 ounce package instant chocolate pudding

1/2 cup Kahlua

16 ounce sour cream

1/2 cup oil

3 eggs

Mix all ingredients together with your super strong arms.

Stir in 1 bag of semi-sweet chocolate chips.

Spray the holy heck out of your bundt pan and add the batter to the pan.

Bake for 1 hour at 350 degrees.
